rio's pumpkin soup☆

soups are perfect for big social gatherings, because they're really easy to scale. cook as big of a pot as you can, and then adjust the amount of bread so that nobody goes hungry.
this particular soup is the perfect party soup: it's vegan, smooth and creamy, and deliciously warmly spiced but not so hot that some people won't be able to eat it. also, it involves chopping up an entire gourd into cubes, a task that benefits from a sous chef or two.
you will need some sort of blender for this recipe, i use an immersion blender. the first time we made this at rio's house, we used a stand blender, but it exploded all over the walls lmao... maybe blend it in two batches.
rio's pumpkin soup
serves many; takes ~1-1.5hrs
ingredients

- 1 smallish pumpkin (or 1 butternut squash)
- 2-3 sweet potatoes
- 3 red bell peppers
- 2 red onions
- ~5 cloves garlic
- ~1in cube of ginger
- bread and butter (or margarine)
seasonings
- 1 tbsp concentrated tomato paste
- 1 cube vegetable stock
- 1 heaped tsp curry powder
- 1/2 tsp chilli powder
- salt and pepper
instructions
- peel the sweet potatoes; peel and deseed the pumpkin. if you like, you can save the seeds and toast them for an extra garnish.
- dice all the veggies. if you have help, start with the red onions, garlic, and ginger, so that those can start frying while the rest is chopped.
- in a large saucepan, fry the red onions until golden brown.
- briefly fry the garlic and ginger, then throw in the other cubed veggies and 1 tbsp tomato paste. fry everything for a bit; this step will improve the flavours later.
- add hot water to cover, and dissolve in 1 cube vegetable stock. let it cook until all the vegetables are soft (~40 mins).
- when everything is soft, blend the soup until smooth. if the soup is too thick for your liking, dilute with more hot water at this stage.
- start by seasoning with:
add more seasonings to taste. keep stirring and tasting as you go.
- 1 heaped tsp curry powder
- 1/2 tsp chilli powder
- salt and pepper
- serve with buttered bread :)
